Oatmeal Toffee Cookies

Another spin on a traditional oatmeal cookie. I use Skor bits... delicious! The recipe calls for you to roll the dough into logs and cut, but these also work well as a drop cookie.

Ingredients

1 1/2 cups flour
1 teaspoon baking soda
1 cup margarine
3/4 cups sugar
3/4 cups brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups rolled oats
1 cup dried cherries
1 cup bittersweet chocolate chips
1 cup toffee pieces

Instructions

Sift together flour and baking soda. Set aside. Cream together margarine, sugar, and brown sugar. Add egg and vanilla. Slowly blend in sifted flour mixture. Add rolled oats, dried cherries, chocolate chips, and toffee pieces, stirring well after each addition. Roll dough into logs. Wrap in plastic wrap. Refrigerate until firm. Cut into 3/4 inch slices. Place discs on ungreased cookie sheets and bake at 350 degrees for 8-10 minutes.
