These are a nice moist cookie with a cakey consistency. Very tasty.
Ingredients
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg
1 cup molasses
1 teaspoon ginger
1/2 cup shortening
1 teaspoon baking soda
1/2 cup boiling water
3 cups flour
Instructions
In a large bowl, combine cinnamon, salt, eggs, molasses, and ginger. Mix well. Add shortening and beat together. Dissolve baking soda in boiling water, and add to molasses mixture. Mix in flour until well combined. Place dough in fridge until firm. Roll out dough fairly thick, cut, and place on ungreased cookie sheets. Bake at 350 degrees for 10 minutes.
