Pumpkin Cookies

These are a very simple and very tasty drop cookie with a cakey consistency.


1/3 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla
1 teaspoon lemon juice
1 cup canned pumpkin
2 1/2 cups flour
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 cup raisins


Beat together shortening and sugar. Add eggs, one at a time, mixing well after each addition. Add vanilla, lemon juice, and pumpkin, stirring until well combined. Add flour, baking powder, salt, ginger, and nutmeg. Mix well. Add raisins and stir until mixed. Drop by teaspoonful on greased cookie sheets. Bake at 350 degrees for about 15 minutes.
